You mention the CZ 75 and the Sig 226.

I have both, and VASTLY prefer the CZ. My favorite variant is the P-01. It's lighter and smaller than the Sig, yet is still more accurate (in my hands) and is easier to make quick follow-up shots with. The ergos on both guns are top notch.
 
What's your favorite all steel semi auto pistols?

Likely any of my older Colt Series 70 Government guns in .45 ACP or .38 Super. I just plain like those Series 70 guns.

Favorite all steel...Hi Power and HP clones, S&W 3rd gen guns, Kahr K9, and 1911, not necessarily in that order.
 
As a Life member of SNM-Sons of Neanderthal Man-I shoot only steel frames.
Favorite ? I'll nominate my High Standard Victor since that's the one I learned to shoot with.

Or about a jillion other pistols in the safe or ones I have shot in the past.

1. Sig X-Five.
2. Tanfoglio Stock (Stock I) 10mm
3 Belgian Hi-Power
4. CZ 75B

I belong to a rifle-pistol club with friendly members,,,
I've fired just about every one of the common semi-auto's out there.

Nothing feels as good in my hand as my standard CZ-75B.

She's just a no-frills high-performance handgun.

the Model 1911

I like modern M1911A1 pistols

I dont buy the oldies, I dont want a safe queen

only modern forged steel Combat M1911's for use
 
For steel framed autos it is the 1911 and the CZ 75B for me.

For all metal framed autos (to include aluminum alloy), I'd have to add the SIG P229 and alloy Commander sized (4" barrel) 1911s. Once I have some rounds through it, I strongly suspect my new CZ P01 will join the list.
 
Any Tanfoglio Elite series pistol. I have a Limited Pro, a Stock 1, and two Matches. Still can't figure out which one I like best.
 
I now actually own just 3, to my great surprise. Favorite to behold AND shoot: Witness Hunter (10mm). Favorite to hold, look at and dream of shooting more than 3 rounds thru without a malfunction: Smith Model 41.
