Ways to spend some money (focusing in this case on "new" firearms):
* Ed Brown 1911 Special Forces (5") w/ bobtail, or
* Ed Brown Executive or Kobra Carry (commander 4" bobtails), then have Ted Yost go after it.
* Wilson Combat--as someone else(s) posted-- and add EB Bobtail
...Then ditto above, if compelled to spend more for the ultimate, have Ted Yost "finish" it.
* Contract with Ted Yost from outset for custom 1911.
(Note: problem with most "gourmet" custom shops is lead time..not for the impatient or those needing instant gratification. EB, Wilson and others are stellar "enough" for most folks out of the box. Tune further later if you feel a need if you have to have it now.)
* Have Colt custom shop build and engrave (if that's your thing) new SAA, with "blackpowder" (chamfered) .44 Special and .44-40 cylinders (or .45LC/.45ACP combo), add antique ivory or other custom grips to your liking. Finish off with tune/action job by Bob James.
* US Firearms (USFA) Pre-War Single Action (Colt SAA clone), same cylinders options as above, Turnbull case hardened frame and hammer, add one piece ivories (etc) and Bob James action/tune. Unless you find the customized Colt of your dreams in a shop or online, USFA's the way to go if you gotta have it now (not talking about additional embellishments like engraving)
* Contract with Bowen, Harton, Clements, Reeder, etc, for a custom Ruger single action per another poster's suggestion. ..using older flat-top "three screw" (or in keeping with my "new" theme, same frame current 50th Anniversary .357 or New Vaquero frames). 44 Special conversion (even with current Lipseys limited production) would be my choice...or customize the Lipsey's .44 right off. Otherwise, pick from a whole range of standard calibers and semi-esoteric caliber conversions, the latter including .41 Mag, or multi-cylinder combos of .38-40/.40S&W/10mm (triple cylinders), .32-20/.327 Fed Mag/.32 H&R -- two or three cylinders, etc.
* Pre lock S&W 65 Lady Smith (unique combo among fixed sight K's: 3", full lug, satin stainless .357), then have Bowen (or whoever) tune. Custom grip (somebody posted some gorgeous "silverblack" wood grips on TFL recently) and/or engrave to your liking, again if that's your thing. S&W 66 Combat Magnum very similar configuration on same frame (except gloss stainless, though you can have anything beadblasted if you like the lo-gloss look)...if preferring adjustable sights. Although not designed (it turned out) to take a steady diet of hot, lighter grained (125 etc) .357, they are fine with the tried-n-true 158s and are still IMO the nicest all-around choices of the most recent but still pre-lock medium (K) frame Smiths. Breaking my "new" criteria here, but these are not yet ancient and it is still possible to find these NIB or LNIB.
