OP
Unforgiven
Little Bill: "I can't believe you shot an UNARMED man!!"
William Munny: "Then he should have armed himself."

Need to finish the sentence for the true effect: "Well, he should have armed himself if he's going to decorate his saloon with my friend."

Little Big Man:

Caroline Crabb: Sold your gunfighter outfit? Turning in your gun?
Jack Crabb: Well, sorry, Caroline.
Caroline Crabb: There's ain't nothin' in this world more useless than a gunfighter who can't shoot *people*!

"Hey! That's quite an improvement. I bet you could almost get that fancy gun outta that fancy holster before some fast gentleman with an old fashioned sixgun...blew a hole in ya."

John Wayne to his son in "Big Jake"

Dirty Harry

District Attorney Rothko: You're lucky I'm not indicting you for assault with intent to commit murder.

Harry Callahan: What?

District Attorney Rothko: Where the hell does it say that you've got a right to kick down doors, torture suspects, deny medical attention and legal counsel? Where have you been? Does Escobedo ring a bell? Miranda? I mean, you must have heard of the Fourth Amendment. What I'm saying is that man had rights.

Harry Callahan: Well, I'm all broken up over that man's rights!

More from Unforgiven (one of the best films ever made)

Little Bill Daggett: Look son, being a good shot, being quick with a pistol, that don't do no harm, but it don't mean much next to being cool-headed. A man who will keep his head and not get rattled under fire, like as not, he'll kill ya. It ain't so easy to shoot a man anyhow, especially if the son-of-a-b*%& is shootin' back at you.

The Schofield Kid: [after killing a man for the first time] It don't seem real... how he ain't gonna never breathe again, ever... how he's dead. And the other one too. All on account of pulling a trigger.
Will Munny: It's a hell of a thing, killing a man. Take away all he's got and all he's ever gonna have.
The Schofield Kid: Yeah, well, I guess they had it coming.
Will Munny: We all got it coming, kid.

Dirty Harry again...

The Mayor: Callahan... I don't want any more trouble like you had last year in the Fillmore district. You understand? That's my policy.

Harry Callahan: Yeah, well, when an adult male is chasing a female with intent to commit rape, I shoot the bastard that's my policy.

The Mayor: Intent? How'd you establish that?

Harry Callahan: When a naked man is chasing a woman through a dark alley with a butcher knife and a hard on, I figure he isn't out collecting for the Red Cross.[Callahan leaves]

The Mayor: I think he's got a point.

Oh how I love Dirty Harry...time for me to watch them all over again. And the Unforgiven. And the Departed (which you pretty much can't quote without an absurd amount of censorship). So many good movies.

The New True Grit

Cross-examining Lawyer: You sprang from cover with revolver in hand?
Rooster Cogburn: I did.
Cross-examining Lawyer: Loaded and cocked?
Rooster Cogburn: Well, if it ain't loaded and cocked, it don't shoot!

"Don't fire till you see the whites in their eyes!!!"

General Prescott's order during the Battle of Bunker Hill in 1775.
