Do you eat hogs or not?

Yes we love to eat Wild Hogs, I have still hunted them with High Power Rifles, like this afternoon, and ocasioally get to hunt them with friends that have Hog Dogs.
The wild hog is one of my favorite animals to hunt, and some of the best eating.
I killed a Big Boar last year, under a feeder, with a clean shot to the head with a 30 06. Dropped in his tracks, gutted him in the field. And it was good to eat. If they are wrilled up before you kill them they will stink up a frying pan. If you live near me, and want to kill them but not eat them, dont feel guilty, I will take the carcass off your hands.:D
 
I make breakfast sausage out of most of my wild hog. Grind about 10% domestic pork fat from the butcher with your meat, and use breakfast sausage spice mix. (I get mine at Wholesale Sports.) I use less mix than recommended, and add Lawerys seasoning salt, and Johnny's seasoning salt. (The premixed sausage mix is too strong with the sage for my family.) Everyone loves it and it works for everything from breakfast to spaghetti. Give it a try, I'm sure you'll love it.

I am turned off by our Brucillosis problem here in SC. I know that cooking the meat will take care of that but no thanks!

If pigs weren't meant to be eaten, they wouldn't be made of ham, bacon, sausage and pulled pork. : )
 
We are overrun with wild pigs in TX. I have a place outside of Waco and they destroy our land. They are killed with extreme prejudice. I do not like to eat them, they are extremely lean, moreso than deer. They are filthy, destructive animals. If I kill one it will be gone the next day. Not from coyotes or buzzards but other pigs eat it, bones and all. They make ok sausage if mixed with domestic pork fat. Mainly the damn things need to be killed, they are not native and they do tremendous damage (150mil. crop damage in TX last year) and are expanding their territory rapidly.
 
Wild pork #1 in my freezer!

I prefer wild pork over venison but the lower fat content makes poor sausage unless mixed with pork shoulder or fat, even then I often add butter and olive oil. I think the bad taste comes from their diet, wild hogs are omnivorous and will eat almost anything, even carrion. Like an earlier poster said, if you gut it and it smells bad, walk away.
Forgot to mention, had some wonderful pasta and sauce tonight for supper. In the sauce? Homemade Italian sausage made from a wild boar. Yep, they're good to eat!

But here in AZ we don’t have many!
Several here or there down south in the Tucson area.
but I ‘am thinking I need to go to Mississippi

Heck yes I eat them! Some of the best pork I've ever eaten. All natural, free-range, steroid free. I don't know how people eat the stuff they sell in supermarkets!

There is probably a cannibal's forum somewhere in New Guinea that has a posting, "Do you eat Americans?"
With all the junk food we consume, they had better think twice!
 
Domestic hogs are typically slaughtered when 75 - 125 lbs depending on variety of factors. Males are casterated when very young. This does in fact improve flavor of pork considerably. In contrast, a 350 lb wild boar is no treat on the dinner plate. The meat is affected by testosterone but I'm not convinced women perceive this flavor more than men.

For the hunter who wants to put premo pork in the freezer: shoot a medium sized sow. Dress, skin, cool quickly.

My opinion: A large sow of 225 lbs and heavier is best cut up, all meat ground & mixed half and half with Jimmy Dean HOT pork sausage. This is a great mix for flavor and fat content. Breakfast sausage, meatballs, chili, etc. are quite outstanding with this ground meat. My mouth is getting all watery just thinking about it.

Jewish and Muslim folks are missing out on some tasty meat!! So it goes.

I read somewhere that if you shoot the hog in the head the meat will taste less gamey. If you hit it in the vitals, adrenaline will foul the meat up apparently.
 
gunrunner1, my brats are way too lean and dry, even with about 10% domestic pork fat (bacon) and 20% domestic pork shoulder. Suggestions?
 
Tx, Try reversing the %'s of the bacon and shoulder to add a bit more fat... Also be sure to pull them off the heat as soon as they reach 160*
