I have also learned how to correctly hold the gun with my thumb on top of the safety and keeping my hand up as high as possible on the grip.
I was taught in the military to grip the 1911 pistol with my thumb under the safety, in a straight position pointing at my target and parallel with the slide.
When I started shooting competition and using oversized thumb safeties I shot with my thumb on top of the safety, more to keep from bumping the safety to the on position.
Some claim the thumb on the safety gives better recoil control, this may be true for those with large hands.
However those with average or smaller hands will find that putting the thumb on the safety actually opens the back of hand, thus giving less control of the pistol while firing.
Keep in mind that part of the recoil impulse in a 1911 is the pistol torqueing in the hand and most barrels in 1911 pistols are rifled to the left, therefore the pistol torques to the left.
I can control the torque of a 1911 better with my thumb straight under the safety the way the military taught me to shoot a 1911.
I no longer want my 1911's to have any oversized or extended controls of any kind, as a matter of fact the closer they are to the original 1911 the happier I am.
As for the OP shooting low right, I would try shooting the pistol with a straight thumb position under the safety.
