Bruce Nelson Summer Special in horsehide. Best for autos, I've carried with a G19, Sig 228, Sig229, Kimber, and G23. He was a good guy and he made a great holster. Lucky for us, many other good holster makers now make his summer special, but it will always be his.

I only have one shoulder holster, but I like my Galco Miami Classic II.
 
I use a Blackhawk Serpa quite a bit to conceal a Glock 23. My often times woods gun, a Super Blackhawk, is carried in a field holster of my own manufacture. The Glock however, is sometimes carried in an IWB thumbsnap rig, a Galco, depending upon the circumstance.
 
Simply Rugged (http://www.simplyrugged.com) Silver Dollar Pancake holster. The owner, Rob Leahy, makes his holsters out of thick cowhide, shaped to the individual gun. Since they're custom made, expect to spend $45 on up for the holster and wait for a couple of weeks to a month for it, but Rob will tell you exactly how long.

I ordered mine a year ago. It quickly became the only holster I ever used with my carry gun, an S&W M60. It's good for open-carry, IWB (with optional straps), OWB concealed carry, attached to a belly band, or attached to a support bra. The latter works well for women who have some curves -- you can conceal a fairly substantial gun, like the M60, even in summer when wearing shorts and a loose tank top. ;) I'm sure there are equally good tricks that guys can use, but I'm not up on those.
 
UBG Striker

I love both of my UBG Strikers. I have one for both of my daily carries. Nate, the owner and maker, can make them for just about any handgun by now and they are incredibly well made. I have one for both my Bersa Thunder 380 and my Kimber CDP II Ultra. They are so comfortable that I have forgotten that I was wearing my Bersa before. I would highly recommend a UBG Holster to anyone interested. You won't regret it.
 
I have two Smartcarry's, www.smartcarry.com, and that may be all that I ever use, again. I have a medium for my Glock 30 sized autos, and it works for many revolvers.

I have an extra wide for Smith N-frame revolvers, my Security Six fits in it just fine.
 
For any fullsize and some heavier compacts I find the Galco C.O.P. 3 slot to carry very well. Lighter guns and sub compacts usually get carried in a Tagua speed scabbard. For 20 odd dollars it really can't be beat.
