A long time coming
I wonder why it took me this long in life to discover the smoker.
4 lb elk roast, Marinated in tart french dressing 1 day, smoked for 5 hours over cherry chips. cooled & refrigerated a couple of days.

I've always been partial to beaver
I've always thought that it smelled kind of fishy. Not terrible if you get them young and tender but the old ones aren't very palatable.
