i love mine. its put up with more than casual plinking abuse (as has the bargain priced SPARC red dot i slapped on, for what thats worth) and i intend to push it harder with some carbine courses coming up.
I bought a Stag complete lower half with an A2 stock and then bought a Stag 1H complete upper half with the plus package for $822 out the door. I'm picking up the upper in about an hour.
If the choice is between a complete Stag or build your own for around the same amount, I say get the Stag. If cost is going to be similar, you might as well get a warranty out of it, which you will with a complete Stag. For $800, I don't think you will have a large enough gap in quality by building. If your budget were higher, building can make more sense.
At HKFan9 - I have never bought online but you point out a very good price for one. And after checking, I found a FFL that charges only $20. I have to build up some more funds though. Plus it's behind a couple of other wants on the list.
HKFan9, that's where I got that price from was Bud's Gun Shop. And someone else mentioned "Might as well get a warranty out of it" and I say "Exactly" to that. I haven't heard one bad thing about Stag and it just makes too much sense. Hopefully tomorrow I'll place the order. I'm gonna call my FFL Dealer sometime today and get it all lined up. I sold my Colt only because I got offered a nice sum of money for it.
My Stag and my BCM I actively try to get to fail, and I have yet to succeed.
I even went as far as feeding the Stag 1100ish straight rounds of crappy steel cased ammo with no major cleaning.. and it kept on running.
AR's are all about magazines I will say however. I did have a fluke with Stag... as they packaged a 6.8 mag with my 5.56 rifle... we had a good laugh on the phone.. and two 5.56 mags showed up on my door step for me.
That being said I gave away the factory mags for ALL of my AR's.. and I exclusively use Magpul Pmags. For $14 a pop on the non windowed one.. it is well worst the investment.. and will generally solve most AR feeding issues.
I recommend Stag to a lot of my own customers. Sure it is nice to have a Mil-Spec gun.. and I do still... but generally most people aren't shooting them enough.. aren't shooting full auto... and not running a suppressor for it to truly matter much.
The extra $250-$300 you can save... is certainly a nice chunk of ammo, or can be put towards a decent optic.
I can't speak for others, only myself. This is my Stag model 15. I picked it up for $400 from someone who needed cash more than I needed an AR. It looked like it was rode hard and put up wet both inside and out. After a good scrubbing I found it shoots pretty darn good and have never had an issues after a few thousand rounds of any cheap ammo I could find. I loaned (gave) it to my son whos in the Air Force so he can have some fun with it and as an excuse to buy a new one.

Here's a pic of the model 15's replacement. Its a Stag lower that I put together and a Stag model 6h upper. The EOTech was only on there for the pic and its now sporting a 6-24 scope. Stag wasn't boasting when it offered a .5MOA garrantee with this thing.

Last but not least is my newest addition to my little AR collection. It's another Stag lower with a Stag model 5H upper (6.8 SPC). I haven't had a chance to shoot this one yet because I got it right before I left for Iraq again. I know all the soldiers are gone. I'm here with the State Department. Anyways if it shoots half as good as my other two I'll be more than pleased.

I have another lower at home. Its a RRA and if I don't go with a big bore such as .458SOCOM I'll probably put another Stag upper on it.
