Military Cartridges, and damage on targets.

I'm not going to discuss terminal ballistics on humans. I've hunted deer extensively and killed/seen killed hundreds of animals. One thing I can say unequivocally is that any bullet performance is an average. By that I mean the same hit will not produce exactly the same damage every time. Differences in muscle tension, attitude, adrenaline levels all make the result variable. Hitting a bone in a slightly different angle or a slightly different bone hardness may throw the bullet offline.
I don't use FMJ to hunt(illegal and unethical) so comparisons are out the window. What I have seen is the damage done to metal targets by both hunting and FMJ ammo. You would be surprised at the damage a soft point will do. At 300 meters I've seen a 160 grain 7mm Mag bullet penetrate a steel plate that a 30/06 FMJ only dented. A .223 50/55 grain HP/soft point that expands on a varmint blows right through 1/4" steel plate at 100 yards. The 5.45x39 FMJ is extremely destructive on steel targets @ 200 yards but I haven't tried the HP or Vmax versions on the gongs yet.

The easiest way for you to answer your question is to do a little reading. Go to teh library or used book shop and pick up a half dozen books written by the men who were there during WW2, Korea, Vietnam, and the last few dust ups in the sandbox. You will learn all you want to know.
