Pine and Prairie Chickens. (Sage Grouse. Ruffed Grouse. Blue Grouse. And one I'm forgetting...)
That would be Spruce Grouse......fire roasted grouse or dutch oven grouse is about as good as you can get.
 
Wow, looks like Pheasant and Grouse are running....err flying... away with it.

Grouse season opened today in WI. I'll be heading north in mid-October to chase some.:cool:
 
I can tell you quail is much better than dove or hungarian partridge. Have never had grouse. Gonna have to do that, I see.
 
I can recall bringing a goose home to my mother to cook.She wasn't all that excited about cooking it,and because was wild,well,it had to be COOKED!
It was the culinary equivalent of NFL football.The football.
Someone gave me a third hand freezer cleanout goose.I waas skeptical.I did not even like my kid's cat,so,with that in mind,I tossed it in the boiler pot for the cat.The kitchen started smelling good and the cat got kibble.I got some good sandwiches.
The best goose I had,an old grandma rural woman cooked.It involved a blue granitewear oval roasting pan and the same vegtables that make pot roast.
You think about a goose migrating,those breasts work like a heart muscle.
I've had excellent quail,pheasant,and chuckar.I'm partial to some of the recipes with cream.Biscuits,etc.But for enjoying having fun eating,the dove,jalapeno,cream cheese,baconwrap thing is probably my favorite.
I tried little brown crane once.Had one wasn't bad,but something kinda swampy started while I was chewing the second one,my body said No,you will not swallow that!!
Oh,I did not see robins or spotted owls on your list,Whats with that?
 
I haven't tasted any of the gallinaceous fowl that I didn't like. Goose is great. I stuff it with dice apples and onions, put it in a roasting bag in a 400 degree oven for an hour... Best gravy I ever ate from all the juices...
 
Quail is first for me, followed by dove and chukar in a tie.

Sage grouse would be on the same level as skunk.....:barf: those big old birds in NV were nasty - if you didn't get a young one, it wasn't worth eating.
