Eating Jackrabbits

I'd say def try them and see what YOU think. Cook them as you would a squirrel i suppose, long slow heat instead of pan fried ect. Anyway, i've never eaten one, but you asking if they are good to eat kind of reminds me of a few summers ago, fishing.

We have these fish in our nearby bays called 'sea robins' everyone i've talked to has said they are a 'trash fish' a bait stealing fish, no good to eat, annoying since you always catch them and not your targeted species ect ect. When asked about eating them people would say, they are all cartalidge, there is only a small amount of meat in the tail, the rest is bone.....they taste terrible ect ect.

So after catching these sea robins way more often, than the stripped bass/blue fish i was going after, i said to myself, next time i catch a big one, i'm going to keep it and eat it. So thats what i did. And guess what? Not only was it a nice mild tasting fillet, all the misinformation i heard/read about them was completely untrue.
 
Check with local authorities about tularemia and other unpleasantness, then run a search on hasenpfeffer recipes. You will do well to heed the recommendations against older jacks.
