Cutting a double barrel

I strongly recommend shooting it first. I've cut a few barrels and regretted it about half the time.
I say cut it first. You can't be disappointed if you don't know what it did in the first place. I always start out with a plan for a gun and don't shoot it until I am done. Then i tweak it if i need to.

Beware of that splinter forearm

There is a straight grip stock hiding in that old PG stock on a 311. I did mine and I like it. Besides mines a hunk of Beech, even if you foul it up, it ain't worth much. Replacement stocks are available pretty cheap.

Do be wary of that splinter forearm. The way the latch is inlet there is not much depth to the wood. Mine now has a notch in the bottom of the forearm:D No biggie, and I sure prefer the straight grip stock

Something to consider

Some double guns (not sure about your Stevens) were not soldered the entire length of the barrel. If you do cut it down, check to make sure before you shoot it.

I well remember Combat and Rat Patrol. Wish they still came on. Along with Sky King, Lost in Space, Land of the Giants, Johnny Quest, The Time Tunnel, Flicka & Lassie. The good old days.

You're not going to get much weight off it. I'd leave it as it is. A 311 has a rather stiff cocking action and the longer barrels will help with that.
