Advise on new rifle (caliber)

6.5x55 (in a modern action) or 6.5x.284 Norma. Recoil less than your .257 Bee, with better ballistic performance as stated previously. Also can't beet those sectional densities, ballistic coefficients or cross sectional area of the 6.5s, when compared to any .257.
 
One of the cartridges on your list that is a great cartridge, although some folks have written off is the 7mm WSM. It really doesn't do anything the standard 7 mag does do, but it is a very accurate cartridge. I will generally slightly outperform the standard 7 in velocity with bullets up to 160 of so grains, and does it with a short action and shorter barrel.

I don't have any problem finding ammo for it, when its available I buy it, and I save the brass for later. I also have a 257 Wby, its a fun cartridge, but for some reason the 7mmWSM is really just more interesting to me. Since the first time I zeroed the rifle, I have been amazed at the tiny little groups that it shoots. It is loud though, and the recoil is noticeable.

Sorry for the long delay in responding...but I'm getting a 280ai. I think that will provide me something different, yet still be a pleasurable to shoot at the range.

I had a pretty sweet 280 Rem custom rifle built off a Mauser 98 action. I traded it like a damn fool, on something I don't even have any more. Enjoy it. The 280 Rem and AI are sweet rounds. If you didn't already have a .25 caliber, I would have suggested a .25-06.
 
For something completely different try something with a big bore like 45-70, or as someone has already mentioned a medium bore like 38-55.
