308 or 30-06 question again?

ANY centerfire rifle will have the barrel heat up from prolonged shooting.

Probably the best for accuracy and least heating would be a bolt-action .223. Ammo is much less expensive than for any of the usual "deer cartridges". There are several relatively low-cost rifles from which to choose.

I see no practical difference between the .308 and the .30-'06 for a rifle like the 7600. Me, I'd go with the .308, and I'm an old '06 reloader guy for some sixty years, now. For me, the '06 is for long-barreled bolt-actions (and my Garand, of course. :) )

Nothing wrong with a 7600 in .308 and some sort of mid-cost .22 rimfire for plinking, targets and tin cans.
 
id probly go with the .308 if i had it to do over again. just cause of cheaper reloading bullets and a smaller powder charge. plus i have a 6.5x55 and the .270 is real close to it.

ANY rifle, any caliber is capable of overheating the barrel.

"Blasting away", or rapid fire in long strings, is very infrequently done.
Even battle and assault rifles designed with full auto variants cannot withstand that type of punishment for long. That's why you'll see that weapons that are designed for the punishment (like the M249) of full auto also come with quick change-out barrels. A minute or two, and they're done...

If you're shooting for accuracy, it is important not to overheat the barrel as it will string the shots and affect accuracy.

If you want to send a bunch of lead downrange, I'd suggest an AK-47...
If you want to punch paper, .223...
Now if you want to add hunting to the mix, that's gonna depend on the game your're talking about...
