Wood coloring changes pre-finish

What you see on the outside isnt always what you get on the inside. Seems a blank tends to be a little darker once the shell has been broken. Dont know why, or have an answer but with the experince ive had with wood, its almost a given. Walnut that is!

Sir:
As you finish out your wood put water on it and dry it with a torch - sand with finer paper time after time - get all the whiskers off and I suppose it changes color some.
