Like I said in one of my post, I eat what I kill when I hunt. My favorite little criters are listed below starting with the favorite:

1. Quail
2. Band Tail Pigeon
3. Doves
4. Pheasant
5. Squirrels-Grey Tree Squirrels.
6. Rabit
7. Rattle Snake

What are yours?

Critters I'd like to try are:

1. Oppossum
2. Racoon
3. Porcupine
4. Coyote
6. Ground Hog

You should try grouse. Larger than quail and absolutely delicious. I don't know if you have them in Cali, but they're good hunting and good eating. I'd prefer 20 gauge over 12 gauge for grouse. Smallish birds, big excitement.

I've been told that big fat NYC rats are quite tasty.Imagine a possum would taste about the same.
True story;
20 yrs ago when i lived/worked in NYC we ordered a pizza at work. as i was going for a second slice a huge rat exited the box and jumped off the table, carrying a full slice of pizza! one of my co workers hit it with a broom as it ran by. didnt even slow it down.
back to the original question, sorry.

Pheasant is great. I'd have voted for duck if you'd had that choice.

I have an old cook book with an opossum recipe. I don't think I'd search out any of the critters in the second list.

The Menu

I have developed a taste of late for braised young squirrels rubbed generously with balsamic vinegar, extra virgin olive oil and a good dash of Crazy Jane's Mixed Up Salt and Pepper. Grilled to perfection over the coals! I'm getting peckish.

In the past I have enjoyed rabbit, quail, pheasant and various snakes (gopher, rattler, cobra [Japan]). I was once treated to some woodchuck and must say, it was rather greasy and gamey. I also once had, no kidding, chipmunk. It's a long and very strange story but I'll paraphrase: knew a guy who had about a million of them living in an old rock wall on his property in VT and well, he shot 'em and dressed 'em and we done grilled and et 'em. Yes, there was lots of Long Trail Double Bag brew involved. Tasty with a wild cherry glaze but too labor intensive for practical purposes.

Never ate rat but killed plenty in Nicaragua, Panama and Lodi, NJ, as a boy, too.

I love turtle and frog's legs.

Rabbit is pretty tasty too but I always picture that little fuzzy face looking up at me. Turtles and frogs are ugly therefore easier to kill and eat. :)

#1 Quail (when you can find em)
#2 Dove ( when I can hit em)
#3 Deer ( when I'm lucky enough to get one)
#4 Frog legs ( Cause I'm better with a gig than a rifle)
#5 Perch ( because that's all I seem to catch when I go fishing)

+1 on the grouse, or as we call them - mountain chicken.
Quail, close second.

The only time I had pheasant, the guy smoking it was also "smoking" and drinking heavily - so by the time it came out to eat, it was the consistency of fiberboard....:barf:

Friend or Fowl

Winged - Dove, if the breast meat hasn't been blown all to hell
4 Legged - Fried Rabbit mmmmmmm like a Thanksgiving turkey. . .

I cast a write-in vote for armadillo.

Some of the finest fried meat you will ever have. Kind of like suckling pig.................
