What grain to use in long range target shooting

Assuming you're talking about .223/5.56, then, according to Berger bullets, a 1:8 twist barrel will limit you to conventional (copper-jacketed lead) bullets weighing 82 grains or less.

If you go to monometal (solid copper or gilding metal) bullets, you will be limited to even lighter bullets.
 
The heavier the bullet (assuming equally streamlined design) the less wind drift. Should be able to shoot the Sierra 77 gr match king BTHP with 1:8 twist. If you go up to 80 gr you may have to seat longer than magazine allows and single load by hand.
 
On a day with light wind a 75 Hornady or 77Sierra will work . 80 grainers can handle wind better but,as NWPilgrim posted, longer then standard OAL necessitates single loading.
