Blued looks best with wood. Stainless can pull off black and wood.Chrome looks good with off whites like ivory and stags. But what looks best on an all steel black gun?

How about rosewood?

Depends on what kind of gun you have. An GI style gun looks really nice with some highly figured walnut.

I tend to like the lighter woods on a darker frame. Spalted maples, birdseye, and fiddleback maple also looks good.

Remember the old saw Form follows function.

Personally I like the look of my black signature grips on my 1911.

If it's glossy any decent wood looks good. If it's matte, rubber looks good. Something like Pachmayr's.

Grips are such a subjective thing. Kinda like askin' folks if they prefer Blondes or Redheads. Me, personally, I could care less what they look like as long as they are comfortable to shoot with and fit my hand.

Buck, you hit it right on the nose. If I have to grab the piece, all I care about is that it is pointing exactly where I am looking. I couldn't care less what the grips are made of, or what they look like. No one ever sees them anyway. That's why it's called "concealed carry".
To me, pride of ownership means that I can hit whatever I have to. Looks come in a very distant second. However, black Hogues look great on anything.

On blued pistols I really really like ivory or polished stag. Stainless, wood or black. Usually a set of Pachs or Hogues are suitable for all occasions UNLESS the rubber would hang up on clothing in a CC situation. JMO, YMMV

On my blue pistols, I like cocobolo, rosewood, or amboyna.

But on my flat black pistols, I like the look of VZ grips, in black desert sand, or in dirty olive (sorry, no pics yet of the dirty olive):
