I got a winchester model 70 I want to have rebarrled it is a 7mm rem mag now but was thinking about changing calibur but not sure what is compatible thought about a 257 weatherby does anyone know if this can be used or if another caliber would be better looking to reach out and touch something with this gun

Anything with the standard belted magnum headsize
That will fit in the action will work with just a barrel change (and psooibly a tiny bit of tweaking of feed rails, but probably not. Going to a .30-06 head size cartridge isn't really practical, as not only the bolt will need to be altered/replaced, but the action rails are already "opened up" for magnum size cases (compared to .30-06 size) and adding & shaping metal so they would work with smaller cases would be cost prohibitive.
Nearly anything in the belted magnum class will work, provided it isn't too long for you action (particularly the magazine). If you want something else, you would be better off getting a different rifle.
I believe .257 Wby will work, but check the case and OAL length to be sure.

Keep that 7mm magie - it is a sensational caliber. Although it does not have enough frontal area for the great bears it is a very fine caliber - I'd never re-barre;l it.

You can rebarrel a 7 Rem Mag to a .264 Mag which uses same case but be warned that .264 barrels have a reputation for being burned out rather quickly. The .257 Wby would most likely have even shorter barrel life as you would be burning the same/larger amount of powder in a smaller diameter bore.

if you want something different, (personally, I wouldn't change the 7mm), you could wildcat it to something like 6-284
or try different 7 loads - they will reach as far as anyone can shoot
