Training Classes Defensive Firearm/Outdoor Survival

So had an interesting experience this 4th of July weekend that got me thinking about taking some outdoor survival and defensive weapons training. My father and I were driving up north in WI when we had a sudden tire blow out. We had a spare so it was no more than an inconvenience but it got the two of us talking.

We were at least a 1 hour drive from anything resembling real help and neither of us had a bar of cell phone coverage. I have an emergency supplies pack in my truck that is geared more towards medical needs than long term survival. I have a ranch rifle in my vehicle and my carry gun which for the summer is usually a .380 or a 38 wheel gun. Other than that we have the normal car stuff, Jumper cables, tire iron, ect ect ect.

The question was had we not had a spare or experienced a more substantial breakdown could we have survived. In this instance the answer was a solid yes because to be fair we could have simply hiked back down the road. Both my father and I are in ok shape ( we are not going to run a marathon tomorrow but we could handle walking a marathon with no other ill effects than some sore legs/back/ect). So then we started talking larger more dangerous situations and the honest fact is that unless we have access to some level of civilization with in walking distance we would have been in trouble.

So here I am at the forum asking for some help. Does any one know of any decent wilderness survival and or defensive firearms courses in the Central WI area? I live smack dab in the middle of the state so getting to the population centers IE Green Bay/Eau Claire, Madison/Milwaukee is not that big of a deal. I don't even know how to go about researching this to know what a good/bad school is.

Any help you folks could offer would be huge.

Dehydration and hypothermia are real killers.
Third, hi protein/hi fat food. To keep blood sugar stable. Something sweet incase blood sugar drops.
First aid
I always have a case of bottled water in my car... I'm not so diligent with the other stuff.
