Stripped sight screw head

How would y'all fix a stripped sight screw head? I tried to take my filler screws out the other day, and one was so stuck in that the head stripped.
 
I would try a left hand drill bit before anything else, if you can find one the right size. Alot of times it'll back 'em right out.
 
Problem is, I tried that, but it was too small it couldn't get a good grip. So I drilled it out. How do I rethread it to a little bigger size?
 
Yeah, I tried a small easy out, but the screw was so soft, it couldn't get a grip. Now I don't know what to do.
 
If the thread was 6-48, you can get "oversized" 6-48 taps and screws from Brownells. No need to drill it to tap it larger.

If you drilled it out too large, you can convert to 8-40 by using a #28 drill and 8-40 plug and bottom taps.

(If a hole is shallow, I often cut one flute in a screw with a Moto-Tool cutting disk to act as a tap and get an extra turn or two.)
