Really, a few custom shops do exotic game or leathers. Galco, El Paso Saddlery, Del Fatti, Kramer, Mitch Rosen, Ken Null.
I've heard a lot of + feedback about horsehide, bullhide.
There are other types available but it's custom. Snake, alligator, rhino, shark, etc.
The firearms you want may require a custom shop. Plan on a long wait too. These firms are small & take months to fill.

PS; Josh Bulman's site & holsters were top-rated but the company seems MIA as of 12/2012. Any TFL members know what happened with Bulman?

What ever you get don't skimp on a proper pistol belt, as important as a good holster..
 
I get orders for quite a few in elephant, shark, ostrich, gator, stingray, etc...

IMHO the shark and elephant are hard to beat. They are both extremely tough skins that also look great!
 
Pimptastic...

I'm all for working gear or tradecraft(horse/bull/cow leather) but some of the "exotic" lines seem a bit pimpy. ;)
It reminds me of a American Handgunner article I saw with a custom made Galco gold lined Miami Classic II shoulder holster. It looked like some gear that Goldmember from the Austin Powers comedy would use.
