This depends on which model you get, as well as the magazines.
A single-stack Kimbers in full size and Pro models have full sized grips. The original magazine capacity was 7 rounds. By changing the shape of the follower and number of spring coils a flush fit magazine can now fit 8 rounds. If you do get an eight round magazine, make sure it is a high quality one. If the magazine spring is not strong enough, it may fatigue when loaded, or simply not push that last round up fast enough. The above is true for all Commander (a trademarked name) and full sized 1911 clones.
The Kimber "Ultra" and other mutated Officer's 1911 traditionally takes 6 rounds. It has a shortened gripframe, leading to the change. By making the same changes mentioned above have been made, allowing 7 rounds per magazine. Same caveats.
Ten round single stack magazines are availible. They will stick way out of a 1911 that does not have a magazine well. Definitely not what to have loaded when concealing. I am leary of these magazines, since they seem prone to misfeeds. I am not avare of higher capacity single stack magazines.
The polymer framed Kimbers are double stacks, a private labeled Bul. There are fourteen round magazines, so now they are attenuated to ten rounds.
Given the potential to rapidly reload with a semi-auto, I would not get too hung up on capacity.
