why does Hornady recommend loading this bullet with an OAL of 2.200 ? It shoots great out of my AR at 2.230 and was considering going longer, maybe mag length of 2.260. Would that not leave enough bullet in the case ?

I think it would leave too little bullet in the case. I also seat them a little longer than 2.200" and mine end up at about 2.220" out to 2.230". You won't gain any accuracy especially in an AR trying to seat them longer. Still has a big jump to the lands seated longer. In my one bolt action .223 Rem seating them to around 2.246" will jam them into the lands and at 2.260" they would not chamber in my bolt rifle. Lots of Hornady 55 FMJ and SP shooters say to just seat them to mid-cannelure. Mid-cannelure with my seating puts them about 2.230" while 2.200" puts almost all of the cannelure inside the case mouth.

How to write a mediocre load book:
Put in more or less powder to find the limits of loose primer pocket and bullet stuck in bore.
Seat bullet as long and short to find the limits of touching the lands and falling turtling back into the neck.

Average those numbers.
Bring in a professional ballistician with a degree in science.
"Use the logarithmic mean, it will make the numbers slightly smaller." - invoice $2k for consulting.

As long as they fit your magazine, and there is enough in the case to prevent it from unseating itself it will not hurt anything to try it.

That seems to work well enough for my purposes when shot from AR's or bolt actions. I doubt you can even get close to the lands of a 5.56 chamber while retaining enough bullet pull to prevent dislodging/misalignment during feeding.

Thank you for the replies, I'll just keep loading them to 2.230 to ensure enough bullet in the case.
