Yeah, it's for veal, but note all they're doing to try to tenderize it: searing the meat, slow roasting, and stopping while the center is still pink.
Fresh herbs, too.

Maybe I'm just hungry.

Yummmy, sounds great - too bad I've never heard of half those ingredients - as a consquence, I'm guessing that they're probably not in my kitchen cabinet. :)
 
FF ,what don't you recognize ? Fennel is finocchio [italian] and marathon [greek]. The battle of marathon was fought on a field of wild fennel !! It has kind of a anise flavor. Found in shops in italian neighborhoods.The other items are fairly common except perhaps the wine. ;)
