Well, just got the last quarter of my cow elk cut up. Just have to grind, cube, and vacuum seal everything tommorrow. I hunted for about 10 days for a bull but never could grow horns on anything. Lucky for me, I took advantage of the additional cow tag they offered this year. Took her at about 450yds through the heart w/ my Tikka 300wm. Still had to quarter her and haul her out about 1.5 miles. Gonna taste great.

Good deal!
I really enjoy cutting steaks and grinding sausage from deer I have killed.
Just got ten pounds of high grade beef fat from the store today.
 
"high grade beef fat"....I'll have to pass that slight oxymoron on to my doctor friend! LOL

I usually just mix ground beef in with the ground venison as we use it. If in chili or sloppy "does", nothing added! Meatloaf gets some beef with it.

I live in NE Ohio, so Elk is a luxury to me. I had some while on Colorado four years ago and it was the best! There is a local livestock auction that has an exotic animal sale once or twice a year. They run younger cow elks through, about 300-400 lbs each. last year they were selling for under $200 in that same weight range. I was tempted to buy one and take it home to butcher! It would have been much cheaper than an elk hunt! I've had some long drags but not over a mile yet! Thank God! I'll take a nice doe over a buck anyday for eating!
 
Game sale..Interesting to say the least. I've never not shot one due to where it was at. Made for some interesting removal trips. At any rate,,cows in the freezer. hopefully I can get in on a late deer hunt.
