I'm new to this kind of stuff as far as non-1911 stuff goes. What sort of competition can I use a full-size non-1911 service pistol in?

.45

You can shoot NRA Bullseye (Conventional Pistol) with any type of .45 pistol, be it revolver or semi-automatic. That "can shoot" involves both the Centerfire matches as well as the ".45 only" match section.
What you cannot shoot are the CMP "Leg" matches.

What kind of non-1911 .45 do you have or want?
There are few with the accuracy needed for bullseye or PPC; S&W M945 and Pardini that I know of.
Any of the rest would be ok for IDPA or IPSC/USPSA.
A Glock 21 would run in GSSF, too.

Well, that really limits which pistol you would use. Whatever, you could shoot IDPA or IPSC. If it is a double stack magazine you will shoot in a different class than 1911s, probably be competing against a lot of Glocks, SIGs, don't know what else.

Don't worry about the 1911 dudes

I do prefer my 1911; 'you bet-cha', but don't sweat shooting a Glock or Sig. When you get the chance to see a group of real good shooters using
stock Bereta 92s, Sigs or Glocks the 'idea' of the perfect 1911 starts to fade.
