Having owned a V-10 and lusted after an Ultra Carry, I would say that accuracy is comparable. You'll have to choose based on fit & finish vs. durability.
The surfaces on the Kimber are more user-friendly, smooth and snag-free. I shot IDPA with the V-10 and came away with bloodied hands from sharp edges more than once. There were also visible irregularities on the frame of my V-10.
However, I've also seen chewed-up feed ramps on an Ultra Carry and Stainless Covert. Not a problem for the integral ramp on the V-10. The Springfields seem built to take more abuse.
Both manufacturers have addressed some of the issues I've referred to. I think you can make either pistol your own. You may not be able to do it out of the box.
