Can anyone tell me how to remove the left side plate? Also what/how to remove the cylinder latch? Or does it come off with the plate?

The cylinder/yoke assembly is already off. No problem there.

The revolver is rusted in many spots, but I have been soaking it in oil for the past 4 days. The fire control group functions properly now, but I still want to have a look/see inside. Sear surfaces, etc.

To remove the side plate, remove the screws that hold it in place, then tap the revolver's grip frame with a screwdriver handle or a piece of wood until the sideplate lifts itself off. If it is rusted in place, that may take a while. The latch thumb piece will come off with the sideplate, the latch itself is a separate piece that fits into the frame from the rear. You have to remove all of the internals to get the latch out. Just a word of warning: if you don't know what you are doing with Colt revolvers, don't.

Disassembling Colt DA revolvers should be attempted only by those who take computer hard drives apart to wipe off old data with a dust cloth.
