Can someone please explain this whole sights thing?

I've been thinking about buying new sights for my Glock 17 but it seems like there's too many different types to choose from. The factory sights are ok for slow target shooting, but since I'd eventually like to do some IPSC/IDPA competitions, I have a feeling they're gonna have to go. I'm also not discounting using this gun for carry, so a sight system that works for both would be nice.

As far as I've seen, there are three main categories of sights out there:
1 - Tritium night sights/fiber optics that usually give you a 3-dot configuration - nice and bright and fancy lookin'
2 - Warren or Heinie "Competition" sights - I've heard a lot of folks use 'em for comps but to me, they don't look that different from regular (factory) sights
3 - "Optical Trick sights" (for lack of a better term) such as Hexagon, 24/7 Express, sure sights, etc. that "trick" your eyes into aiming quickly under stress

The problem is: I feel that sights in any of these categories have beneficial attributes for competition/self defense. Am I just missing something here? Can anyone clarify this for me or at least gimme some recommendations?

It is difficult choosing aftermarket sights. Given the uses you've listed I'd lean towards option 1. But the key is really to find what works for you. Lots of people have LOTS of different preferences. I suggest you visit your local gun shop and ask to check some products out, they may have some pistols fitted with aftermarket sights.
 
It really depends quite a bit on your individual eyesight.

If you do get into IPSC/IDPA, use the stock gun with stock sights for awhile.
You'll have a better insight (no pun intended) into what you and your eyes need to be efficient and effective.
