They all suck.

Quick strip and basic cleaning:
Winchester and CZ (centerfire) are at the top. Totally different disassembly methods, but equally simple and easy.

Remington isn't bad, so long as you have a boot lace and a coin available.

Mossberg is fiddly and meant to be done at a bench.

Ruger 77 bolts seem simple, especially since they appear to be essentially sporterized Mauser 98 bolts.
But it's not. Finding an appropriate pin or drill bit to stick through the hole in the striker can be difficult, especially if not at a bench or in your shop. And even if you do, the holes are often plugged with machining debris. And, even if the hole is clear, the tolerances may have stacked against you, so that even with a properly sized pin installed, the striker lug will not clear the bolt body without manually drawing the striker back.

Ruger American bolts are just plain stupid. Dumb disassembly method that's not easy in the field, is still fiddly at a bench, and if you slip or your improvised disassembly tool slips, the striker assembly goes off like a hand grenade.
 
Winchester and Remington are pretty easy. Look the bolt in a Browning X-Bolt sometime. You'd want to be in a clean room to take that nightmare apart. My only gripe about the X-Bolt.
