On the Remington they have the "MODEL 870™ EXPRESS® SYNTHETIC 7-ROUND" which is almost perfect for what I want EXCEPT it doesn't come in wood as far as I can tell. Is this something I can order or what?

You should be talking to Remington about that, after all they build the gun. The people on these forums don't.

As far as I know... they don't make synthetic furniture in wood. Something about plastic not being wood in the first place... I don't know.
Try looking for this...
"MODEL 870 POLICE"
I think it may be more along the lines of what you're looking for.
PS: You also may not know, stocks and grips on shotguns are among the things most easily changed on a shotgun. And lots of people sell them.

Wood stocks for 870
You might even be able to pick up a set of used wood "furniture" for an 870 from somebody building a tactical 870 or straight swap 'em for your synthetic.
Note for home defense or a pickup "bubba" gun the plastic is actually better than wood.
Have not done it but I suspect that the furniture is interchangeable 'tween the 870 Wingmaster and the Express. But not all the metal bits are.

just picked up a 870 myself and quickly found out it is the barbie doll of shotguns. More parts available than you can shake a stick at.
