Does anyone know the difference between the 6.5 Creedmoor and the
7 x 30 Waters...or if there is a substantial difference at all?

comparison

Looking for medium game hunting cartridge.

Have a 7x30 Waters in the single shot rifle and find it 1/ 2" MOA at 100yds and one shot kills.

How would the 6.5 compare?

Why would you even want to experiment with something else? You already have what everyone else is looking for.

Heavy .264 cal bullets buck wind better at long range.
I don't know how the 7-30 recoils but the 6.5 Creedmoor is known for its light recoil and good accuracy at long distance.
As far as 7-30 Waters goes, and if your getting great accuracy and one shot kills then I wonder myself what's wrong with that? Other than commercial availability in some areas, I would think the Creedmoor is easier to find in Most areas of this country, Hornady makes a couple different loads.

I think the 140 gr is best for 6.5.As an old 6.5x55 shooter .The 6.5 Creedmore gets about 100 fps lower velocity than the 6.5x55. A fine deer round.

I don't know about you guys, but I have several rifles that will do exactly what I want. I still want another one because, well, umm.. Because I DO! :D
I can relate to the OP's quest.
